Knife designed for precise cutting of vegetables, meat and fish. The most traditional and typical knife of Japanese cooks or chefs is the Santoku. Therefore, it is equivalent to the western chef’s knife but with a series of differences. Santoku means “three good things” which is what is pursued in Japanese cuisine with this knife, that is, cutting, slicing and chopping. This knife has a design with a straight edge at the back, a rounded tip and usually has alveoli to prevent the cut food from sticking to the steel blade, thanks to the small air bubbles that are created inside the alveoli. . Santokus knives have a very acute sharpening angle which produces great precision in the cut.
